Beignets

1 c. very warm water

1 T. yeast

2 (5 oz.) cans evaporated milk

1/2 c. sugar

2 eggs

1 1/2 tsp. salt

1 tsp. vanilla

2-4 c. flour

3 c. + 3 T. vegetable oil

In a large bowl, combine the warm water and yeast. Stir in sugar. Add milk, sugar, eggs, salt, and vanilla. Add 2 c. of flour to the bowl and stir until a thick batter is formed. Continue to add flour until a soft dough forms. Knead dough, adding just enough flour to keep it from being sticky. Pour 3 T. of vegetable oil over the top of the dough, cover and let rise 1 hour. (If you plan to make them in the morning, just plop the dough into a gallon-sized ziploc bag & stick it in the fridge until you're ready to fry the dough in the morning.) Once you are ready to fry the dough, heat 3 c. of vegetable oil in a large pot over medium heat. Roll risen dough very thin, cut into small rectangles, then carefully drop dough into hot oil. Fry on one side just until puffy and barely brown, then turn and fry on the other side. Remove from heat, place on a large platter lined with paper towels. Once all dough has been fried, sprinkle the mound of cooked beignets with Citrus-Spiced sugar, then generously sprinkle with powdered sugar. Enjoy!

Citrus Spiced Sugar

Sweet, perfect sugar with the slightest zing of warm, glorious flavor.

1 c. sugar

Zest of 1 lemon

Zest of 1 orange

1 tsp. cinnamon

1 tsp. nutmeg

In a small bowl, combine all ingredients together. Sprinkle atop warm beignets. Sprinkle on toasted, buttered bread.

Eden is home!


Eden is home and made out like a bandit with goodies for a one night stay! A dolly, a baby that talks that has a bed and pacifier. Wax writing book, tiara with ribbons, blanket and a Hello Kitty doll. Wow more than she's ever got at PCMC.


Liver Die Charity Concert

Last night there was a charity concert for Clark Kimble. It was nice to finally meet Super Clark. He had a liver transplant back in August and had many complications - one of which is that he needs a bone marrow transplant. Luckily one of his brothers is a match. I also got to meet Nichole whose son has Alagille Syndrome. He also had a liver transplant in August.

Back in the hospital :(

Friday night Eden started to get a fever. We gave some Tylenol and watched her through the night. In the morning she was still warm, and has had a cough and runny nose so decided to take her to Utah Valley to get blood work done to see what was going on. She was not very lively like she usually is. Erica and Eden spent quite a bit of time in the ER before getting a room on the 4th floor. Luckily Eden Perked up and was feeling better. We thought Eden would not like the plastic barriers in the cribs there but she was having fun. She likes to rub her head on them and make funny faces smooching her nose.


Seth also got to go to Instacare yesterday as he was breathing kind of hard in the morning and had a croupy cough. He got a liquid steroid and is sounding a lot better.

Pine-wood Derby


The Elders Quorum had a Pine-wood derby race Friday night. So Wednesday headed over to Walt's after school to make a car. The Green Hornet was my design - Bruce Lee stared in it so it had an Asian theme. Nothing too fancy. Got tips from the guys at school to grind down the Axles and put the weight in front so that is what we did. Took 3rd place so not bad for a first attempt and a confidence booster for when I have to help the boys make theirs. Although Uncle Jeff beat me so maybe have to combine the two designs.
